Golden Hands, Gumza 2024

14,90€/29.14 BGN

The color is transparent, shiny, ruby red. The aroma is dominated by notes of ripe blackberry, gooseberry, tobacco leaf, vanilla, blackberry, and cocoa. The taste is harmonious, with a light to medium body, pleasant freshness, and serious depth. The finish is juicy, with hints of blackberry and wild blackberry.

The wine is ready for consumption now, but it has great potential for aging in the bottle. Over time, the bouquet will become increasingly noble, retaining the fruity notes of blackberry and black forest fruits, which is characteristic of the Gamza variety.

FOOD PAIRING Thanks to its freshness, this wine would pair well with meat dishes such as pork chops, lamb à la Gergov, and veal medallions, as well as vegetarian dishes such as bean stew or mushroom risotto.  It also goes well with fresh cheeses or soft cheeses with a rind such as Camembert, Reblochon, or Munster.

VINEYARD Gumza from our own vineyards, planted with the aim of reviving the old varieties and traditional viticulture in the Veliko Tarnovo region. The plantation has narrow rows - 1.7 m, and the training and pruning are similar to those characteristic of our region in older times, but adapted to work in rows similar to regions such as Sauternes or Saint-Émilion in France. In our work in the vineyards, we adhere to the principles of organic farming and maintain biodiversity in the soil and the surrounding area. In this spirit, part of the planting material for the variety has been taken from old plantations in the region in order to preserve local genetic diversity.

VINIFICATION The entire process is carried out in the spirit of the old school: fermentation is traditional, in open vats, with some of the grapes crushed and some left whole. The method of bioprotection and minimal doses of sulfites are used. After fermentation, the wine is aged in French barrels for 14 months. Repeated racking after natural clarification replaces the need for filtration.
